Deli Meat Sandwich and a side of fruit
On any given day of the week, my easy go to E lunch is a deli sandwich. It starts with this AMAZING easy fridge fermented bread:
It's sooooo easy! Takes 5 minutes or less to throw the four ingredients in the jar, I mix with my hand, let it rise on the counter for a few hours and then pop in the fridge for at least 3 days to bring down the carb count. Then you can make loaves of bread or even pizza crust (A favorite in this house!) The bread has a wonderfully crispy crust and European artisan flavor! In culinary school I was taught traditional Artisan breads and making this bread brings all those memories and smells flooding back!
Fast forward at least 3 days, and slice your loaf and make this amazingly simple sandwich with some tzatziki sauce (This is my 5 grams of fat for this E meal) and fresh spinach!

Finish with some mustard if you like and cucumbers for crunch! Even bell peppers or tomatoes! I usually go for a side of raspberries or strawberries but these Cara Cara oranges are in season right now and are soooo DELICIOUS!
They look like grapefruits inside and are so good you'll think you're eating candy! Keep them in an E setting though because they are high in natural fruit sugar. I only had half of one with this sandwich... my kiddies inhaled the rest!
