Need a meal that's ready in less than 30 minutes! Look no further... Garlic Butter Shrimp with roasted broccoli and spinach bacon salad.
Start with broccoli tossed in butter and coconut oil, salt and pepper. Do this in a ziploc bag so you can really massage everything in. Spread it out on a baking tray, do not crowd the tray! These are baked at a very high temp for quite a while and they get so deliciously crispy, they taste like kale chips! Super Yum! Sautee the shrimp in butter, salt and pepper just until pink then remove from the pan. finish the garlic butter sauce and add the shrimp back and toss quickly before serving. For the salad, toss the spinach with sliced mushrooms, bacon bits (we save a few pieces from breakfast), caesar dressing and some additional parmesan cheese. We threw this salad together to imitate a spinach salad that our favourite italian restaurant makes. The key to the right flavour here is making your caesar salad dressing with a couple tbsp of bacon grease added in.
