I whipped up this simple recipe tonight before dinner for a little S snack when my tummy grumbles... Fat bombs are just that... an explosion of delicious healthy fats! They are meant to be 1-2 bites of pure satisfaction and flavour explosion. These ones use coconut oil which is so good for your overall health. I drizzled them with some 85% chocolate to finish them off... keep them stored in the freezer for an anytime S snack in a pinch!

In a medium bowl, whisk up cream cheese, coconut oil, and strawberry puree. Taste for sweetness and adjust with a pinch of stevia or a little more powdered erythritol/xylitol. Add heavy whipping cream and whip until thickened and scoop-able.
Scoop out using a small ice cream scoop (mine was about 1 Tbsp size). Make sure you have parchment under the bombs or they will stick to your cookie sheet. Send them to the freezer for 30-60min until firm. After they have firmed up in the freezer, drizzle with melted 85% chocolate. (I used my favorite - Trader Joe's!!! I am from canada and whenever we visit the states, we stock up on this treat!)
That's it! Keep them in the freezer and enjoy one or two when you need a quick S snack.
Creamy Strawberry Fat Bombs:
- 3-4 strawberries
- 3-6 tsp powdered erythritol or xylitol (I used my coffee grinder for this)
- 1 Tbsp of vanilla extract
---Blend together to make a smooth puree
- 3/4 cup cream cheese
- 1/4 cup coconut oil at room temperature (or butter, but coconut oil has more health benefits)
---Mix together with the strawberry puree until a smooth mixture comes together. If your coconut oil was liquid depending on the time of year, put the mix into the freezer for about an hour to firm up before the next step.
-Add 1/2 cup of heavy whipping cream
---Whip until the whole mixture thickens to be scoop-able
---Scoop onto parchment lined baking sheet (I used a scoop about 1 Tbsp in size) and place in the freezer until firm.
---Melt some 85% chocolate and drizzle over your fat bombs once firm and return to the freezer. I use Trader Joe's Brand.
