This recipe is a good serving of comfort food... made with my tweaks, it's on plan and LOW CARB! Trim Healthy Mamas, this is a Heavy S Dinner that will satisfy the whole family!
The original recipe for this calls for using regular spaghetti noodles which are totally off plan on THM. I thought this might be just as tasty using spaghetti squash! So start by cooking your spaghetti squash. I find it is best cooked sliced into rings and roasted for 50-60min. at 375 degrees. Let it cool before you try to scrape out the strands of "noodles".
I usually use two smaller squashes for this recipe or one huge one. Next fry up 2 lbs of ground meat of your choice (turkey, pork, beef, etc...) Drain any fat that results and then mix in some marinara sauce or on plan spaghetti sauce. Because I use marinara sauce, I also add some parmesan cheese and Italian spices.
ASSEMBLY TIME! Scrape the squash out in strands that resemble noodles. In this picture I'm using a square 8x8 pan because I only had one medium squash. Usually when I have two squashes for this recipe, I definitely use a 9x13 pan. Layer a few pieces of butter, topped with half the spaghetti squash noodles. Then the cream cheese, cottage cheese and sour cream mixture. Top with the other half of the "noodles", then a few more pieces of butter, then finally the meat sauce. Bake for 30 min. Then top with grated cheddar cheese and finish in the oven for 15 more minutes or until the cheese is melted. Let it sit for a bit before serving.
I love to serve this with caesar salad (we use pork rinds for croutons!) and for the kids, a piece of bread to make it a crossover for them. This dish is definitely a husband pleaser and even a crowd pleaser if you are headed to a potluck! My husband is so happy when he comes home and sees Million Dollar Spaghetti on the table!
