So we have tried lots of on plan cookies... many sadly, went straight to the garbage can... My husband LOVES cookies! Any time I ask him to request a dessert because I need an excuse to bake... he ask for cookies. A simple traditional chocolate chip cookie. After my many trials of different recipes, and on the heels of a THM friend request to blog about some on plan cookies (thank you Maria!), I present these gems, I think this might be as close to an off plan cookie as we may ever see... but of course, I will keep trying new recipes.
First I cream the fats, then add eggs, dry ingredients and finally chocolate chips and optional unsweetened coconut.
Pop in the freezer to firm up for a little bit and then scoop and bake!
They come out so nice and fluffy and off-plan looking! yum!
They sink a little as they cool, but look completely drool worthy still!
My tweaks: Used two-thirds of a cup of xylitol instead of 1 cup in the original recipe; use hazelnut flour in place of almond flour.

Leave exposed on a rack or paper towel to crisp up a bit or store in a ziploc or air tight container in the fridge t keep them soft and chewy. Definitely better the next day (in our opinion - most low carb cookies are!)
