These amazing turkey burgers are brought to you by a facebook post from Bridgett Baker Zerbach. She is new to THM and came up with this delicious recipe and with her permission, I share it with you! Thanks Bridgett! I added the faux-tato salad to it to a make a well rounded dinner!
This dish started by crisping some bacon in the oven (best way to cook it in my humble opinion!), boiling some eggs, steaming some bite sized cauliflower, and mixing up the yummy fauxtato salad sauce! Let the sauce chill in the fridge for now.
Once the cauliflower has cooled, mix it with the chopped up crispy bacon, two or three sliced hard boiled eggs, some chopped green onions, salt, pepper, and enough sauce to coat it all.
Now get started on the turkey Burgers. You can use ground turkey and make your own turkey burgers or do what I did and use pre made (on plan! from Costco!) turkey burgers. I thawed them in the fridge and then carefully sliced them in half. Mixed up some cream cheese with pickled jalepenos (you could use fresh, but I did not have any). Spread some on half of the patties and seal with the other half. make sure they're good and sealed or your filling will spill out when they are cooking. I seasoned the outside with salt, pepper, and garlic powder.
Pan fry in a cast iron skillet with some coconut oil until thoroughly cooked. I used medium to medium low heat for about 10-15 minutes total.
Serve with Guacamole on top. It really compliments the spicy cream cheese filling! Tonight we used Costco Greek yogurt guacamole. Usually we make Mrs. Criddles Guacamole but alas, we had no avocados today. This worked just as well! For the guac recipe, check out my Taco Salad Post!
Fauxtato Salad recipe:
-One small cauliflower or 2/3rds of a large one
-One bunch of green onions sliced
-6 strips of bacon cooked to crispy and chopped up
-3 hard boiled eggs sliced
-salt & pepper to taste
-additional veggies of your choice like peppers or celery)
Dressing:
-1/2 cup of sour cream
-1/2 cup mayo (we make homemade so it's sugar free)
-2 tsp dijon mustard
-1 Tbsp ketchup (we found a stevia sweetened ketchup we found at Superstore!)
-1.5 tsp Worcestershire sauce (this has sugar in it but it's such a small amount that I let it slide - you can omit if you so choose)
-2 Tbsp dried onion
-salt & pepper
-dried sage (eyeball it but I used about 1/4 tsp)
-smoked paprika (eyeball it but I used about 1/2 tsp)
Burgers:
-Ground Turkey or pre made turkey burgers (6oz per burger, split into two 3 oz thin patties) I made 5 burgers this time.
-8oz cream cheese
-one big handful of pickled jalepenos (about 1/4 cup) chopped up.
