I'm baaack!!! After a much needed family vacation away, I am back with an amazing recipe to share! This one comes from one of my favorite bloggers... Carlyn at All day I dream about food! Salted Caramel Chocolate Chunk Ice cream. This one is Low Carb, Sugar free, so creamy and dreamy and weight loss friendly! Trim Healthy Mamas, this one is an S! Start by making the caramel sauce with butter, molasses, and sweetener. I didn't have any xylitol or swerve on hand, so I subbed with THM stevia. I used blackstrap molasses which gave my ice cream a very bold flavour, just a heads up if you're not into a bold molasses punch, use golden. I was so excited to be making ice cream, that I forgot to take a picture of my caramel, but it was so easy, so don't worry. Blackstrap didn't need 3-5 min. to boil either, just be careful to take it off the heat if its getting too dark too fast. Add vanilla, salt, cream and almond milk. bring it up to 170F then slowly whisk it into four egg yolks. Put it back on the heat until it reaches 180F. Then cool it down briefly in an ice water bath. Chill for at least 2 hours in the fridge. After the custard chills for at least two hours, mix in the optional vodka and xanthan gum. Both of these help reduce icy-ness in the final product. I definitely recommend using them! Pour into an ice cream maker and let it churn churn churn. While it is freezing, chop up your chocolate. I used Trader Joe's 85% but my husband said it was a bit too bitter for this ice cream, next time I will try lily's chocolate chips (they are sweetened with stevia). I ended up adding a little more THM Stevia during the churning process. in total, I used 10 doonks of it (just over 1/4 tsp total). Churn until it is like fluffy soft serve (see the third picture below). Finish by quickly stirring in the chocolate and then getting it to a freezer in an air tight container. Freeze for at least 2 hours, but even after 2 hours, our batch was still very soft and oh so delicious!!! Can you believe this is my first bowl of homemade ice cream in over 2 years!
