Tonight's Dinner was a delightfully easy but very tasty plate of Mahi Mahi!
It started with whole grain dijon mustard being painted on the fish (a perfect job for my 2 year old... who is "painting" the fish in the picture):

Next grind almonds and add smoked paprika; mix. Cover the fish in this.
Next fried in coconut oil, about 4-5 minutes per side and then my husband topped each with a little pat of butter (why not right?) and popped the pan in the oven for another minute or two to finish.
The toasted nuts make a beautiful skin and delicious flavour for this mild fish. This would be great with any mild fish like tilapia or cod. Load up with a side of buttered steamed broccoli and a plash of lemon over it all... YUM!
