Thank to a facebook request on my blog to make THM friendly Taquitos (thanks Misty Jeffers!), I bring you these awesome bean and cheese taquitos! Misty requested bean and cheese taquitos because those are her son's favorite and he is the taquito lover! Taquitos are basically appetizer sized crispy burritos. These ended up being a Crossover because of the bean and cheese and sprouted flour and ghee that we fried them in. Here is what we ended up with:
I had to get creative... Up here in Canada, our options for low carb on plan tortillas are very limited. I do, however, have a large bag of sprouted flour in my freezer. I started by making some tortillas using sprouted flour, rolled them golf ball size. Cooked them in a hot cast iron pan until lightly browned then into a ziploc bag to cool and soften:
Next came the filling. Refried beans, cilantro and spices. Roll each tortilla with some filling and shredded mozzarella cheese. roll as tightly as you can.
Pan fry them on the stove in some coconut oil or Ghee (we had some homemade) until crispy and browned and the cheese is melted. Serve with guacamole, sour cream and salsa. So simple and so yummy. Remember this is a crossover of fats and carbs, so it's still on plan, just not weight loss friendly. Thanks Misty Jeffers for a great request!
